Executive Chef Mike Milligan
Mike Milligan, Executive Chef for Agua Caliente Casino Resort Spa spent many summers at the famous "Jersey Shore." But Mike wasn't out playing in the waves... instead, he began his culinary career by working at the Surf City Hotel at the tender age of 15. That is where Mike developed his "love for food, hard work and the science and lore of the kitchen." And he has never left the kitchen.
After graduating from the Culinary Institute of America in NY, Mike began working for the globally recognized brand of Hyatt Hotels where he was able to live and work in the most beautiful destination resorts within the Hyatt brand. By acclimating to such diverse culinary locations as Lake Tahoe, Maui, Las Vegas, Miami, Beaver Creek and Indian Wells, Mike gained valuable insight and developed an eclectic point of view on food and people.
He was able to develop a strong understanding of multi-unit culinary operations involving everything from large catering departments to fine dining restaurants within a single resort. All the while, Mike never lost sight of his personal culinary flair that make each meal special for his guests.
Mike has worked at the 4-diamond, Agua Caliente Casino Resort Spa for the past 8 years, and orchestrating perfection as the Executive Chef since 2010. In his top culinary position, Mike oversees the resort's six diverse dining options, in-room service and catering. Mike and his team pride themselves in developing specialized menus for unique Special Events and serving anywhere from 25 to 1,000 people in the Catering and Convention Services department.
While preparing meals for large groups, Mike is also hands-on in The Steakhouse kitchen, where his dedication to excellence continues to garner awards for the restaurant. Mike attributes the Steakhouse's success on, "the combination of providing the highest quality food, served by the most experienced staff in the most elegant setting in the Valley." So whether you choose to dine at Waters Cafe the Grand Palms Buffet, the award winning Poker Deli or the poolside, Wetbar - Mike and his team work together to bring the best possible 4-diamond culinary experience that Agua Caliente's guests have come to expect, and they deliver.
